The Bases of Tajimaya Foods

“Tofu-An” is a small hermitage style house in one corner of the TAJIMAYA factory in Koya, Itami city, Hyogo prefecture. It is here that hand-made tofu is produced in the traditional manner.

The process:

  • Step 1 : Grind the soybeans in the stone mill.
  • Step 2 : Boil “GO” in the Japanese style big kettle.
  • Step 3 : Add the natural bittern to make it hard.

It takes about 5 hours to complete all steps 1 through 3. Alternatively, if we use machines we can save a lot of time, however, we are in the business of making good quality tofu in the traditional hand-made way. -This is our basic style and spirit ?
